1 cup carrot juice with about 2 tsp orange zest and juice from one Valencia orange, then top off with water to 1 1/2 cups
1/2 cup skim milk
1/4 cup raw honey
1/4 cup expeller pressed coconut oil
4 1/2 cups whole wheat bread flour (I use 3 cups whole wheat and 1 1/2 Sunflower Millet blend)
1/2 tsp salt
2 tsp cinnamon
1/2 tsp cardamom
1/2 tsp ground ginger
2 tsp dry active yeast

1 cup dried cranberries


How Do I Make Cranberry Orange Bread?

Here is how you make Cranberry Orange Bread:

Put all dry ingredients (except yeast) in a large glass bowl. Mix well. Create a deep well in the flour. Set aside. Melt honey and coconut oil; add milk to make one cup. Heat juice and water to about 98?F, add yeast, stir and use sponge method to mix dry ingredients with yeast. Let the dough rest for 10-20 minutes until paste has doubled and become puffy with air bubbles. Begin mixing and add the milk mixture as dough comes together. Dough will be slightly sticky and soft. Knead on a well floured surface; make sure dough becomes tacky but not sticky. Add died cranberries as you knead. Lightly grease 2 loaf pans with coconut oil. Separate dough in half, and shape each half to fit in a loaf pan. Let dough rise until doubled in size. Punch downIf using bread machine, half recipe. Please follow your bread machine's instructions for adding ingredients. Mine calls for liquids first. Makes one 1 pound loaf
