5 slices whole wheat bread
2 cups light soy milk
.5 cup egg substitute
1 egg white
.5 teaspoon vanilla extract
.25 cup raisins
.25 cup sugar
.5 teaspoon ground nutmeg


How Do I Make E-Mom's Bread Pudding?

Here is how you make E-Mom's Bread Pudding:

In a 2 QT glass casserole dish, beat egg substitute, egg white, sugar and vanilla until frothy. Stir in soy milk. Tear bread into small pieces and add to milk mixture, pushing down so it all absorbs some of the milk mixture. Allow to soak for 15 minutes. Stir in raisins and sprinkle the top with nutmeg. Place casserole dish into 9 inch square baking dish, and add at least an inch of water to the outside dish. (Casserole dish will bake in a water bath to prevent the bottom of the pudding from burning.)Bake at 325 F for 1 to 1.5 hours, or until top is lightly browned and cracked and a knife inserted into the middle comes out clean.
