Dice bread, 3-5 cups fresh or 3 ? cups stale bread or cake.
Soak for 15 minutes in 3 cups warm milk and ? teaspoon salt.
While bread is soaking, combine in large bowl:
3 egg yolks (save whites)
? cup sugar
1 tsp. vanilla or rum flavoring
1 tsp. cake spices

Add to egg mixture juice of ? lemon and ? cup fruit preserves.

Beat well.

Beat the 3 egg whites to stiff peaks.

Pour egg mixture over soaked bread. Combine.
Fold in egg whites.

Spoon and press mixture into 8? square glass dish.
Set dish in a larger 13 x 9? glass dish filled with hot water.

Bake 45 minutes and cool.
Serve with hard sauce, or melted white or dark chocolate topping.
