Preheat oven to 375 degrees. Spray an 8x8 inch baking dish with cooking spray. In a large bowl, combine eggs, Splenda, and vanilla extract. In a medium bowl, combine dry milk powder and hot water. Gradually add milk mixture to egg mixture. Fold in bread cubes. Pour into prepared baking dish. Lightly sprinkle nutmeg over top.
