I am one that loves gooey warm bread puddings of all kinds... this is a recipe I came up with to quell a hankering on a rainy Sunday. It uses pantry items you probably have in hand and though it is light you can make it gooey by drizzling the warm "pudding" with Smucker's Fat Free Sugar Free Caramel Syrup (but add the calories to your final count).The house will smell so good when you make these!!

1/2 c fat free evaporated milk
1/4 c + 1 Tbs granulated sugar
1 tsp almond extract
2 tsp ground cinnamon
1/4 c sliced almonds
1 Tbs Smart Balance Light

Here is how you make Mimi's Almond Bread Pudding:

Spray a 9"X9" glass baking dish.Cut bread into rough cubes; put into prepared baking dish.Whisk together: eggs, whites, milk, sugar, almond extract, 1 tsp cinnamon; pour over bread cubes.Top with almond slices and sprinkle with remaining sugar and cinnamon.Cover loosely with wax paper; bake in 350 deg oven for 20 mins.Carefully remove wax paper and dot top with margarine; return to oven for additional 10 mins.Let sit 5-10 mins prior to cutting into 6 portions.Serve warm... with a drizzle of caramel sauce ;-) and meet me in heaven!!!
