1 loaf cinnamon raisin bread (we use a 1 1/2 lb. whole grain one)
1/2 c. raisins
6 c. milk, divided
2 4-serving pkg. cook and serve sugar-free vanilla pudding (NOT instant)
1 large egg
1 to 2 tsp. vanilla extract
1 tsp. ground cinnamon
1 c. chopped pecans
non-stick cooking spray


How Do I Make No Sugar Added Bread Pudding?

Here is how you make No Sugar Added Bread Pudding:

Yields about 24 servings (depends on size of pan and size you cut it).Spray a baking pan with non-stick spray. (I use a glass baking pan about 9"x16".) Cut bread into cubes and put into greased pan. Pour 2 cups milk over bread. Set aside. Combine pudding mix, remaining milk, egg, vanilla, and cinnamon. Beat with mixer on low (or hand held blender) until smooth. Pour over bread in pan. Sprinkle chopped pecans over top.Bake at 350F for 1 hour. Cool slightly. Serve warm with sugar free whipped topping or however desired. (I like cream! *grin*) I bake this at 325F because I use a glass pan.
