Preheat oven to 325 degrees.Butter or spray a 9x9 square or round baking dish.In mixing bowl, beat together eggs, milk, sugar, cinnamon, and vanilla.Place dry bread cubes in baking dish.Pour egg mixture over all, pushing bread around to get it all wet.Bake 35 - 40 minutes or until knife inserted near the center comes out clean.Cool slightly before serving. Best topped with ice cream hot or whipped cream cold.
