1/4 cup Splenda brown sugar
1.25 tsp. baking soda
1 cup molasses
3/4 cup boiling water
4 egg whites, lightly beaten

Makes 36 mini (1.25" dia.) muffins 1. Preheat oven to 325F degrees. 2. Lightly spray mini muffin tins with cooking spray 3. Sift flour, baking powder, cinnamon, ginger, cloves, and salt together in a mixing bowl. 4. Combine pumpkin and the sugar in a separate bowl. Stir in 3/4 teaspoon of the baking soda and the molasses. 5. Add the remaining 3/4 teaspoon of baking soda to the boiling water. 6. Alternate adding the pumpkin puree mixture and the boiling water to the flour mixture, stirring to combine. 7. Add the egg whites. 8.Fill cups, bake for 20 minutes or until a wooden pick inserted in the center of the cake comes out clean. 9.
