This is a tweaked, practically fat-free version of LIBBY'S pumpkin cranberry bread. If you want, you can fold in 1 c. unsweetened cranberries at the end. My egg count is a little weird because a) we only have jumbo eggs & b) I used 2 yolks so that I could save the whites to eat.
