Here is how you make Eleanor's Zucchini Bread:

Mix together wheat germ, flour, baking powder salt, cinnamon and nuts. Mix together sugar, egg beaters, oil and vanilla in a separate bowl. When combined, continue mixing and slowly add zucchini. Stir in the dry ingredients and blend well. Pour into two standard sized bread pans that have been sprayed with cooking spray.Bake at 350 degrees for 1 hour. If your bread pans are glass, the loaves will take another 5-10 minutes to bake. Let it cool for 15 minutes before cutting - if you can. ;-)Serving Size:?Makes two loaves. Serving size is 1/12th of a loaf.
