Beat until ?lemony?:

3 eggs
1 cup oil
2 cups sugar
1 tsp. vanilla

In separate bowl combine:

3 cups flour
1 tsp. salt
2-3 tsp. cinnamon
1 tsp. baking soda
? tsp baking powder

Mix dry ingredients into egg & oil mixture.

Add:

2 cups zucchini, cut up
? cup chopped nuts

Divide batter into two greased loaf pans.

Bake @ 325 degrees for 60-75 minutes. Check with toothpick.

Let sit for 15-20 minutes before removing from pan.

NOTE: This is what it says on my copy, but I really think the baking soda and baking powder amounts should be switched. Grandma used to dice her zucchini into ? inch cubes.
