Oil and flour 2 loaf pans. Grate a large zucchini using a cuisinart. Put the grated zucchini in a strainer and squeeze the excess moisture out of it. Beat eggs. Add oil, applesauce and brown sugar and mix well. Add vanilla, grated zucchini and honey and mix. In a separate bowl combine all the dry ingredients together and mix well. Mix dry ingredients into wet ingredients.
