Work in powdered sugar. If mixture is dry or crumbly add 1 Tbsp. more of peanut butter.For balls: Shape into 1/2" balls and place on baking sheet covered in wax paper. Refrigerate at least 2 hours or overnight. Once cooled, melt chocolate chips in double boiler. Dip balls and place back on wax paper. Refrigerate until chocolate is completely hardened. Store in airtight container in cool dry place.For cups: Form peanut butter mixture into round disks and place in bottom of mini muffin tin. Refrigerate at least 2 hours or overnight. Once cooled, melt chocolate chips in double boiler. Dip round disks in chocolate & place back into GREASED mini muffin tin. Refrigerate until chocolate is hardened.
