Here is how you make Apple Cake with Walnuts and Currants:

1. Preheat oven to 350 degrees. Butter and flour a 9-inch tube pan. or use silicon pans like I did. Beat the apple sauce and Splenda together in a food processor (fitted with a paddle attachment) , while assembling the remaining ingredients. After about 5 minutes, add the egg beaters and beat until the mixture is creamy. 2. Transfer wet mixture to a large bowl. Sift together 3 cups of flour, salt, cinnamon, and baking soda. Stir into the batter. Add vanilla, apples, walnuts, and currants Stir until combined.3. Transfer the mixture to the prepared pan(s). I used 1 loaf pan half full and 1 deep 9" cake pan quite full.4. Bake for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan before turning out. The original recipe recommends serving at room temperature with vanilla ice cream. I severed it warm with I can't Believe it's Not Butter.
