1/4 cup Spenda for baking, brown sugar
1/4 cup real brown sugar
(there's little difference in calories between the splenda and real brown sugar, this was purely experimental to see what the texture would do by lowering the sugar)
4 large eggs
1 tbs canola oil
4 cups whole wheat flour (next time, I'm gonna use 3 cups flour, 1 cup bran)
4 tsp baking soda
1 tbs instant espresso powder
1 tbs cinnamon
1 tsp nutmeg
1/4 tsp ground ginger
Optional but makes for good flavor
1 cup chopped dates
2 apples, unpeeled and chopped.

Preheat oven to 375 degreesPrepare muffin tin or pyrex dish or loaf pansIn a large bowl, combine apple sauce, brown sugar, eggs and oil.In another bowl, combine, flour, baking powder, espresso powder and spices and whisk together.Add dates and/apples if you're using themMix all ingredients together until just moistened.Pour into appropriate cooking container.Bake anywhere from 25 - 40 minutes til cooked.Calories will change based on the apple sauced used - definitely go for organic though if you can - and avoid any apple sauce with added sugar -it doesn't need it.Calories will drop a bunch if you omit the chopped apples and dates - you've got a lot of apple flavor based on the apple sauce -but it's nice for texture..Note: I made the cake on Sunday and sunday night it seemed dry to me - when I brought it to work on Monday -the resting it overnight really moistened it up - so you might want to make it a day ahead of time.. (I read somewhere recently that when you're using whole wheat flour, it does sometmes needs extra time for the glutens to rest...
