2/3 c. apple juice
1 tsp. apple pie spice
1 Granny Smith apple; peeled, cored, and grated (or chopped if you prefer chunks of apple)
1/2 c. chopped walnuts (toasted if preferred)
2 containers (16 oz. each) cream cheese frosting (can also make your own or use less than required to reduce calories)

(Optional: 1/3 c. butterscotch caramel topping or sauce) - not used in this recipe. Add calories/nutritional info. as needed.

Here is how you make Caramel Apple-Walnut Cake:

Heat oven to 375 degrees (F). Grease and flour 10" angel food or tube pan. In bowl of electric mixer on low speed, prepare cake mix according to package directions for Bundt (I could not find this), substituting apple juice for 2/3 c. water and adding apple pie spice. Stir in apples and walnuts. Pour batter into prepared pan.Bake 45 min., or until toothpick inserted in center comes out clean. Let cool in pan for 20 min. Invert cake onto wire cooling rack. Let cool completely. (Optional: Using serrated knife, cut cake in half horizontally to create 2 layers. Place bottom half of cake on serving platter. Spread with cream cheese frosting. Spread caramel topping over frosting. Top with second cake layer.)Frost entire cake with cream cheese frosting. Garnish with nested apple wedges and sugared cranberries, if desired.
