2/3 cup Bob's Red Mill Extra Thick Rolled Oats Whole Grain
1/4 cup Brown Sugar (packed)
2 tbsp Butter, salted

Here is how you make Erica's Sour Cream Apple Streusel Cake (Low Fat, High Fiber):

Preheat oven to 350 degrees. Combine dry ingredients in large bowl. Beat egg, egg whites, and sour cream in small bowl. Peel and slice apple into thin bite size pieces.Add wet ingredients and apple pieces to dry ingredients and mix well.Spoon into 11x7 in pan and spread dough to corners.In small bowl mix oats, brown sugar, and butter with fork until crumbly.Pour strausel over cake evenly.Bake at 350F for about 30 minutes or until center is done (knife comes out clean from center).Cut into 10 pieces.Note: Cake and streusel could be made with artificial sweetner and margarine, but I am allergic to both, therefore the recipe is written with regular sugar and butter.Number of Servings: 10Recipe submitted by SparkPeople user ERICALYNNJ.
