Line a 20cm deep sponge tin with a paper liner. Melt the butter, add the sugar and cinnamon and stir until the sugar has dissolved. Remove from the heat. Prepare and core the apples, then slice them into the pan. Toss until well coated then turn them into the prepared tin and spread out evenly. Beat the eggs with a fork in a large mixing bowl, then add all the remaining ingredients, except the water, and beat until mixed with a wooden spoon. Beat for a further 1 minute then add the warm water and beat again. Spoon the mixture over the apples, level the top then bake for 35-40 minutes, or until golden brown. Cool for a few minutes then invert onto a serving plate and remove the liner.
