1 Cup White Sugar

2 Large Carrots finely grated

~Cream Cheese Icing~
100gms Cream Cheese
2 Cups Icing Sugar
2 Tbsp Milk
1 Tsp Vanilla or Almond Essence


How Do I Make Alicias Carrot Cake?

Here is how you make Alicias Carrot Cake:

Preheat oven to 180degrees C, or 350degrees F.Beat eggs with sugar for 4mins (electric beater works best!)Add oil and beat for a further minute.Sift flour, baking powder, baking soda and cinnamon into mixture and mix til well combined.Add carrot and fold into mixture.Pour mixture into 2 20cm round cake pans and put into oven for 45mins or until cooked through.~Cream Cheese Icing~Put Cream Cheese, milk and essence into mixing bowl and beat, gradually add icing sugar. This will make a thick frosting.
