Mix eggbeaters, sweetener, carrots, & water in a bowl. Add wet ingredients to dry ingredients and mix together.Spray 8x8 glass pyrex dish with non-stick butter spray &pour ingredients into dish. Bake for 20-30 minutes until toothpick comes out clean. DO NOT overbake-- it will become too dry. Cool and cut into 8 equal size bars and enjoy! Put leftovers in an airtight zip-lock or container and store in fridge. Can either let come to room temp or can microwave for a few seconds.
