8 oz. juice packed crushed pineapple (drained)
1 cup grated carrots
1/4 c chopped walnuts
2 tsp. baking powder
1/2 tsp. baking soda

8 oz. fat free cream cheese (softened)
1/4 c light, fat free no sugar added vanilla yogurt
1/3 cup coconut
1 marshmallow
3 sugar free jelly beans

Here is how you make Honey Bunny Carrot Cake:

1. Preheat oven to 350 degrees. 2. Prepare 2 6X6 pans (for the bunny cake) or 1 9x9pan. 3. Mix the brown sugar, sugar substitute, oil, applesauce, eggs and cinnamon. 4. Combine and mix the flour, baking powder and baking soda. Mix into the wet mixture.5. Stir in the pineapple, carrots and walnuts. 6. Pour mixture into pans.7. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. 8. Cool on rack in pan for 5 minutes. Then remove from pan and cool.9. Mix the softened cream cheese and the yogurt. 10. Use 1 cake round for the bunny face. Cut the second cake round to make the ears and the bowtie.11. Frost the bunny cake and decorate with white coconut and green coconut (add a couple of drops of green food coloring) and jelly beans.
