Cream together the sugar, eggs, applesauce, oil and vanilla. Add carrot. In a separate bowl, combine the flour, baking soda and cinnamon, then slowly add to carrot mixture. Pour into greased 9x12" baking pan and bake for 50-60 minutes or until a toothpick inserted into the middle comes out clean.For frosting, cream together the cream cheese, lemon juice and powdered sugar 1/2 cup at a time until you get the consistency you like.
