2 1/2 C. Whole Wheat Flour
2 tsp. Baking soda
3 tsp. Ground Cinnamon
1 tsp. Baking powder
1 tsp. Salt
4 Large eggs
1 C. Sugar
3/4 C. Brown Sugar packed
1 C. Unsweetened Applesauce
1/4 C. milk
1 TBSP Vanilla extract
3 C. Shredded Carrots
1 C. Chopped almonds
3/4 C. Raisins
8 oz. Package of Cream Cheese softened
8 TBSP butter softened
3 C. Powdered sugar


How Do I Make Our Family's Favorite Carrot Cake?

Here is how you make Our Family's Favorite Carrot Cake:

Pre-heat oven to 350 degrees F. Spray 13x9 cake pan with cooking spray and set aside. Combine flour, baking soda, baking powder, and cinnamon in a mixing bowl and set aside. In a seperate bowl beat together eggs, sugar, brown sugar, vanilla extract, milk and applesauce. Gradually add flour mixture to the sugars mixture making sure flour is mixed in well. Add in carrots, raisins, and almonds and pour mixture into greased pan. Bake for 50-60 minutes. In the meantime blend together 8 oz softened cream cheese, 8 TBSP softened butter, and 3 C. powdered sugar. Blend ingredients until smooth. If frosting is too thick then thin with milk 1 TBSP at a time until frosting reaches desired consistancy. When cake is cooled frost with cream cheese frosting.
