1/2 cup butter, softened
1/2 cup canola oil
1 teaspoon coconut extract
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
2-1/4 cups cake flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 cups flaked coconut, (sweetened angel flakes)
1/4 teaspoon cream of tartar

Frosting and Whipped Filling
2 packages (one 8 ounces, one 3 ounces) cream cheese, softened
2/3 cup butter, softened
2 cups confectioners' sugar - more to taste
1-1/4 teaspoons coconut extract
1 cup heavy whipping cream

Coconut Topping
2 cups flaked coconut, toasted

Here is how you make Amazing Coconut Cake:

Cake-cream butter, sugar and canola oil together-put egg whites in separate bowl and add egg yolks to butter/sugar mixing in one at a time-mix in extracts then powder, soda, salt-add flour gradually alternating with buttermilk-stir in coconut flakes-add cream of tartar to egg whites then beat until it makes firm peaks. -fold egg whites into batter gradually-grease three 8 or 9 inch round pans (i put a layer of parchment paper in the bottom then rub bottom and sides with butter stick)-divide batter evenly between the three pans then bake at 350 for 25-30 minutes until toothpick comes out clean and cake is spongy in the middle (usually 25 is just right)-let cool for 5 min in the pan then remove from pan and finish cooling on rack.Coconut ToppingBake 2 cups flaked sweetened coconut in a glass pan at 300 - stirring frequently to avoid burning - until golden brownFrosting -Cream butter and cream cheese together-add sugar gradually and beat until creamy-beat in extractWhipped Filling-beat whipping cream in chilled bowl until it starts to thicken-add 1 cup of the frosting 1 spoonful at a time while beating and continue to beat until it forms soft peaks like whipped creamAssembly-place one layer on cake plate then spread half of whipped filling on top and sprinkle with toasted coconut-place next layer on top and spread remaining half of whipped filling on it then sprinkle with toasted coconut-place final layer on top then frost top and sides with cream-cheese frosting-spread remaining coconut on top and sides (start with light sprinkle then add more as desired)Refrigerate at least 2 hours before cutting.
