Beat at low speed just until moistened, then at medium speed for about 2 minutes.Prepare cake pans by spraying with non-stick spray and flouring very lightly. Pour batter into pans and bake at 350 degrees for 30-35 minutes or until toothpick comes out clean. Cool completely.Beat together instant pudding mix and milk for about 1 minute. Chill for about 1 hour and then fold in rest of pineapple and 1/2 cup pecans. Spread pudding on top of one cake layer and top with the other cake layer.
