Set aside. In small bowl, beat remaining sugar with egg, vanilla and salt until very thick and fluffy. Stir together flour and baking powder. Stir into egg mixture until well blended, then stir in 1 T. reserved fruit syrup. Pour into well greased 8 inch layer cake pan. Arrange peach wedges, rounded side up on top. Sprinkle with sugar cinnamon mixture. Bake in preheated 375 oven for 25 to 30 minute so until cake tester tests clean. Cool on wire rack.
