Add sugar and vanilla and beat until fluffy. Add dry ingredients and milk alternately to beaten mixture, beating on low speed after each addition. In seperate bowl, beat egg whites til stiff peaks form. gently fold into flour mixture. Turn into prepared pans. Bake at 375 about 20 minutes on wire racks. remove from pans. Cool.Icing: In a mixer bowl, beat together cream cheese, butter, and vanilla til light and fluffy.Gradually add powdered sugar, beating til smooth. To frost cake:On top of bottom cake round, spread thin layer of cream cheese frosting, followed by a generous layer of blackberry jelly. Top with other cake round, and frost top and sides with cream cheese frosting. Garnish with fresh blackberries if desired.
