Preheat oven to 350 degrees.Combine flour, sugar, baking powder, salt, cloves, and allspice. Stir to combine.In another bowl, beat eggs and vanilla. Stir in applesauce. Stir in canola oil and beat until smooth. Slowly add milk. Add wet ingredients to dry ingredients and stir just until combined. Add crystallized ginger and quickly stir in. Pour into 9"x13" pan that has been coated with nonstick cooking spray.
