1/2 tsp salt
1 tsp baking soda
1/3 cup oil
1 tbsp Vinegar
1 tsp lemon extract
1/2 tsp vanilla extract

Here is how you make Lemon Wacky Cake:

Pre-heat oven to 350 degrees. Mix together dry ingredients. In a seperate bowl mix together wet ingredients. Add wet ingredients to dry and mix well. Pour into 8" x 8" greased pan and bake at 350 degrees for 28 - 33 minutes, or when golden brown and inserted toothpick comes out clean. I have also used a loaf pan, and it takes about 40 minutes to bake. I have also added a couple of drops of yellow food coloring to make it look more "lemony." Makes 12 servings.
