CAKE:
1/2 cup + 2tbsp butter
1 1/2 cups white sugar
3 eggs
1 cup buttermilk (or 1 tbsp. lemon juice + 1 cup 1% milk, combined and left to sit 5 min)
2 tsp lemon extract
2 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda

2 tbsp butter, melted
3/4 cup lemon juice
1/3 cup sugar

FILLING:
1/2 cup lemon juice
1 tbsp corn starch
1/4 cup butter
3/4 cups sugar
4 egg yolks, beaten smooth

BUTTER CREAM FROSTING:
4 cups confectioners sugar
1/2 cup butter
2 tbsp lemon juice
1 tsp lemon extract
2 tbsp 1% milk



How Do I Make The Ultimate Triple Threat Lemon Layer Cake?

Here is how you make The Ultimate Triple Threat Lemon Layer Cake:

To make the cake:1) Pre-heat oven to 325*F. Lightly grease 2 8" round cake pans.2) In a medium bowl, sift together flour, baking powder, salt and baking soda. Set aside.3) Cream together butter and sugar in a large bowl. Beat in eggs one at a time using an electric mixer. Beat in buttermilk and lemon extract.4) Gradually beat dry mixture into wet mixture until completely combined.5) Pour batter equally into 2 prepared pans and bake in preheated oven for 25-30 minutes until cakes are lightly browned and a toothpick inserted in the center comes out clean. 6) Cool cakes 5 minutes and then turn out onto a clean surface (large cutting board of baking sheet). Prick the top of the cakes all over with a fork or sharp knife.7) In a small bowl, mix together 2 tbsp melted butter, 3/4 cups lemon juice and 1/3 cup sugar. Drizzle liquid over hot cakes equally and then let cakes continue to sit until completely cooled.Make the filling while cakes are cooling:1) In a medium saucepan whisk together lemon juice and cornstarch. Add butter and sugar then bring to a boil over medium heat. Boil for 1 minute stirring constantly.2) Reduce heat to low and whisk in beaten egg yolks. Cook over low heat for up to 5 minutes, whisking constantly, until thickened. DO NOT let this mixture boil.3) Pour filling into a glass bowl, cover with plastic wrap and place in the fridge to cool completely.To make lemon butter cream frosting:1) In a large bowl, cream together butter, lemon juice, lemon extract and confectioners sugar.2) Beat mixture to thoroughly combine, and then beat in milk.3) Continue to beat until frosting is light and fluffy.4) Set frosting aside in covered bowl until ready to use.Put the cake together once both cake and filling are completely cooled:1) Move one of the round cakes onto your serving dish and cover top with filling.2) Very carefully place the second cake onto the bottom layer. This is easiest done by just taking whatever the cake is sitting on and carefully up-ending it over the bottom cake.3) Once you have the layered cakes positioned, pack butter cream frosting around the seam of the cakes to keep the filling from pressing outwards.4) Continue to frost the entire outside of the cake. Decorate as desired and refrigerate until ready to cut and serve.Serving Size:?Makes 16 slices
