Put the mixer on medium speed and add the remaining sugar by sprinkling it evenly over the beaten egg whites. Continue to beat the whites for a few minutes until they are thick and shiny. Add the vanilla and orange zest (use orange extract for a bit more orange flavor) and continue to whisk until the whites are very thick (another minute or so). Sift about 1/4 of the flour mixture over the egg whites and very gently fold it into the batter with a rubber spatula.
