In a 10 inch heavy skillet with a heat-resistant handle or a heavy casserole, melt 1/4 cup butter and 1/4 cup Earth Balance Vegan butter over very low heat. Mix and don't let it brown. Remove from heat, and sprinkle brown sugar evenly over the butter. Arrange pineapple slices to cover bottom. Distribute cherries around pineapple and then set pan aside.3. Sift together flour, baking powder, and salt.4. Separate the eggs into two bowls. In a large bowl, beat egg whites just until soft peaks form.
