2 TBSP lemon juice - add to milk and allow to sit for 10 minutes or more
1 1/4 cups unsweetened applesauce
1 cup chopped cooked prunes
1 cup chopped pecans
1 tsp. soda
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. all spice
1/2 tsp. vanilla extract

Sauce:
3/4 cup Splenda no calorie sweetener
2 TBSP Corn Starch
1 TBSP Water
2 TBSP Sugar Free Pancake syrup

Here is how you make Prune Cake:

Preheat oven to 350 degreesSift flour, baking powder, soda and spices together.Beat egg whites slightly, add applesauce, milk with the lemon juice (it will look curdled. this takes the place of buttermilk).. Next add the vanilla and flour mix. Then the prunes and pecans.Bake in three (3) 9" cake pans for 30-35 minutes at 350 degrees. Dump onto wire cooling racks. Make sauce: Mix Splenda and corn starch well then add remaining ingredients and divide equally, spreading over the 3 layers while they are still hot. Allow layers to cool. Slice each layer into 8 pieces. Makes 24 servings.Serving Size:?Makes 3 (9") single layer cakes for 24 servings. 1 serving = 1/8 of one single layer cake.
