1 box (1lb, 2.25 ounces) white cake mix
1 pkg. (4 serving size) fat- free instant white chocolate pudding mix
1 1/4 c. water
1/2 c. nonfat sour cream
3 egg whites

filling
1 pkg.(10ounces) frozen sweetened raspberries, thawed
1 1/2 tsp. cornstarch
2 TB raspberry or amaretto liqueur

Topping
21/4c. nonfat or light whipped topping
3/4 c. nonfat yogurt, any flavor (mix the 2 together for the frosting)


How Do I Make Royal Raspberry Cake?

Here is how you make Royal Raspberry Cake:

Place the cake mix and pudding mix in a large bowl and stir to mix well.Add the water, sour cream, and egg whites and beat with an electric mixer for 2 minutes or until well mixed.Coat two round 9" cake pans with non stick cooking spray and divide batter among pans, spreading it evenly. Bake 325* for about 25 minutes or just until the tops spring back when lightly touched. Allow the cakes to cool to room temp. inthe pans.To make the filling transfer 1Tb. of the juice from the raspberries to a small bowl. Stir in the cornstarch and set aside.Place the berries and the remaining juice in a 1qt. pan and cook over med. heat on stove top till mixture comes to a boil and berries begin to break down. Stir in cornstarch mixture and cook for another 2 minutes or until thickened and bubbly. Stir in liquer, remove from heat and allow to cool to room temp.Place one layer of cake topside down on a serving plate. Spread raspberry filling over cake. Place top cake layer over filling. Spread the frosting over the top and sides of cake. Cover and refridgerate 2 hrs. before serving.Note: I omitted the liquer and it was still very good. ALso the cake can be done in 3 layers but it's more work and I didn't have 3- 9" pans.Number of Servings: 1Recipe submitted by SparkPeople user LILAC79.
