Wrap 5 bananas, separately I n foil and roast in 400 degree oven for 30 minutes. Let cool 10-15 minutes.2. Place 1/4 cup ground chia and/or flax (I use a combo I buy ground together) in a small dish. Pour in 50ml (airplane bottle) of banana rum and enough hot water to measure apx. 1/2 cup. Sir & let sit on counter to gel.3. Preheat oven to 315 degrees & grease a large bunt pan.4. In mixer beat roasted bananas & 1 1/2 cups room temp butter Until smooth. Beat in eggs, chia/flax mixture, vanilla and then add in 2 1/2 cups brown sugar.5. Slowly beat in all 3 flours & baking powder, scraping down sides of bowl as you go. Set bowl aside.6. In small saucepan mix 1/2 stick butter, 1/4 cup brown sugar, cinnamon, orange extract, 1/2 cup rum and zest and juice of 1 orange. Stir over medium heat 3-4 min, reduce temp to lowest setting while you prep pan.7. Slice 3-4 bananas lengthwise into 3-4 slices each. Gently lay each slice along grooves of bunt pan, from center flute to outer edge. When you invert cake the bananas should looked draped over the cake. Lay a slice or two along bottom of pan to hold other bananas in place.8. Take sauce off heat and spoon over bananas trying to coat each and evenly distribute around pan.9. Dollop batter inside bananas with large spoon/ spatula to top of pan. Tap gently on counter to settle batter.10. If you have extra batter: I used small mini loaf pan, sprinkled pan with brown sugar & rum and leftover banana slices then filled as above. 11. Cook at 315 degrees 1 hour 15 min to 1 1/2 hours. Cake should be dark brown & toothpick tested clean. (Check smaller cake after 45 minutes.)12.
