1 cup Steen's cane syrup
1 egg

1 1/2 teaspoons baking soda
2 Tablespoons ginger
1 teaspoon vanilla
1/2 to 3/4 cup buttermilk (we use vanilla soy milk and add 1 teaspoon white vinegar to thicken it)

Mix all ingredients except buttermilk. Add buttermilk just until batter reaches cake-like consistency. Bake at 350 degrees in a 9x13 pan (metal works best) that has been sprayed with cooking spray.
