Preheat the oven to 180 degreesGrease a 22cm loose-bottomed tin with coconut oilPlace the desiccated coconut in a food processor and pulse until very fine. Add the oil and vanilla extract and pulse again. Press the mixture evenly into the base of the tin and bake for 10 mins.To Make fillingPlace all the ingredients in a food processor and process until smooth.Line the outside of the tin with two sheets of foil to ensure it's waterproof. Bake in a bain-marie for 1 hour.
