How Do I Make Berry 'Cheese'cake?

Here is how you make Berry 'Cheese'cake:

Soak the cashew nuts in water for 2 hours. For the base, place the almonds in a food processor with the cinnamon, cacao powder, carob powder, coconut sugar and a pinch of himalayan pink salt and process until the mixture is ground into a flour. With the food processor still running, add the medjool dates one at a time until well combined. Melt the cacao butter and add it to the mixture whilst the processor is still running and a tbsp of spring water slowly until the mixture forms a soft dough. Press the dough into the bottom of the cake tin so that it is an evenly distributed layer and place in the fridge while you make the filling.Melt the coconut oil. Place the vanilla extract, soaked cashews (discard the soak water), fresh fruit, melted coconut oil, 1/2 tsp himalayan pink salt, juice of one lemon and maple syrup in your high powered blender and blend until completely smooth. Take the base out of the fridge and pour the filling mixture over the top. Spread out the mixture to create an even layer and smooth over the top. Return to the fridge until set.
