A work in progress on making it as healthy as possible. Already added 2 cups of carrots to the original recipe and took out 1/2 cup of sugar and replaced oil with applesauce. This is one that all my friends and family absolutely LOVE, and you can't have too much carrot I've realized. It's super moist and REALLY good.

Cake:
2 C granulated sugar
1 C applesauce
4 eggs
4 C grated carrot
2 C flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp ground allspice
1 tsp ground cinnamon

Frosting:
1 8oz room temp pkg of nonfat cream cheese
2 C powdered sugar
4 tbsp room temp butter
2 tsp vanilla


How Do I Make Carrot Cake w/Cream Cheese Frosting?

Here is how you make Carrot Cake w/Cream Cheese Frosting:

1. Preheat oven to 375 F. Butter and flour 2 9-in pans or 1 13X9-in pan.2. Combine granulated sugar, applesauce, eggs and carrots.3. Sift dry ingredients into another bowl then add 1/2 cup at a time to the carrot mixture mixing well.4. Divide batter evenly into 2 pans or into one. Bake until toothpick comes out clean. 35-40 min. (if using 13X9 pan bake for 45 min.)5. Cool in pans on wire rack for 10 minutes. Then unmold the cake from pan and let cool on wire rack completely.6. For the frosting combine everything in bowl and beat until smooth.*I personally combine all the cake ingredients at once and use a 13X9 in. casserole dish to bake it in for about 45 min.
