3 6 oz pkgs Cream Cheese (do not use lite)
3 large Eggs
1 Cup Granulated Sugar
1 Tsp vanilla

1 cup Sour Cream
1 Cup Granulated Sugar
1 tsp vanilla

1/2 cup Butter
2 cups Graham Crackers crushed

Here is how you make Cheese Cake with Sour Cream Topping:

Preheat oven to 400 degrees (this will be turned down to 350 when the cake is put in)------------------------------------------------Prepare Crust by mixing graham cracker crumbs and melted butter. Press firmly onto bottom and 2 inches up side of 9-inch springform pan. Refrigerate until ready to use.------------------------------------------------Cream together 1 cup sugar and the cream cheese until smooth. Scrape bowl down.Add eggs 1 at a time mixing until smooth & scraping bowl after each addition.Mix in vanilla.------------------------------------------------Pour into prepared pan.Put cake into oven and turn oven down to 350 degrees. Bake about 50 minutes or until center is set and there are very small cracks and slight browning near the edge------------------------------------------------Mix together 1 cup sour cream with the remaining 1/4 cup sugar. Stir in vanilla.When cake appears done, carefully spread the sour cream mixture on top. Turn off oven and leave cake inside for 15 minutes. This will set the sour cream topping.Cool at room temp in the pan for about 1/2 hour. Put in fridge in the pan overnight (or for at least 6 hours).Unmold & serve w/fruit if desired.This is not a diet cheesecake but great for a special occasion!!.
