2 cups ground ginger snaps, about 20 cookies
5 tablespoons melted butter
12 ounces of neufchatel cheese
3 tablespoons of sour cream
3 Tablespoons of honey
1 large egg
3 eggs worth of egg substitute (.75 cup)
2 ounces of cognac or other quality brandy
2 Tablespoons fresh grated ginger
2 tablespoons cornstarch
3.4 cup orange juice
orange zest a teaspoon


How Do I Make Shredder Cheese cake?

Here is how you make Shredder Cheese cake:

Grind ginger snaps in food processor or blender to make crumbs, combine in a bowl with melted butter. Press that mixture into bottom of springform pan (10"). Mix the egg substitute and neufchatel on high speed with a mixer till smooth. Add in fresh egg, sour cream, brandy, grated ginger and yogurt and mix again until smooth. Pour batter on top of crust and bake at 350 for 40 minutes. Top should have golden brown spots on it. Remove from oven and cool on rack. When cake is thoroughly cooled, reduce orange juice, corn starch and orange zest in small saucepan until a syrup is achieved. (Sweeter oranges make the best glaze!) Pour glaze over cooled cake and refrigerate for at least an hour before serving. (It is ok to eat cake warm, but it has a rather flan like texture and taste.
