We adapted this recipe from a recipe submitted to the Kansas City Times by the American Royal Dairy Princes back in the mid 1970s. We like this fudge because it doesn't seem so excessively sweet and we can justify that it is good for us because it has cheese in it. LOL

The ingredients for Cheese Fudge are:

10 ounces American cheese slices, at room temp
1/2 cup (1 stick) butter, at room temp
1 cup cocoa powder
1/2 cup Nido dry milk powder
1 tablespoon pure vanilla extract
6 1/2 cups powdered sugar ( a little less than 2 pounds)
1 cup chopped walnuts



How Do I Make Cheese Fudge?

Here is how you make Cheese Fudge:

Cut or tear the cheese into small pieces and put in mixer bowl with butter and cream intil blended and smooth. Add cocoa and vanilla and continue to beat on low until blended. Add dry milk and half the powdered sugar and beat until blended. Add rest of sugar and exchange beater for dough hook and mix until it forms into a solid mass. Press into buttered pan - 9" square or 7X11' about. I use a Tupperware Bacon Keeper - it's the perfect size.
