How Do I Make Amaretto Cheesecake?

Here is how you make Amaretto Cheesecake:

Preheat oven to 400 degrees.Mix graham cracker crumbs, melted butter/ margarine, and 2 Tbsp of sugar and press into 9" springform pan. Set aside in refrigerator while preparing filling.Cream together Neufchatel cheese and remaining sugar. Add eggs and mix well. Add amaretto liquor and mix well. Pour filling into prepared crust.Cook at 400 degrees for 20 minutes, then reduce heat to 250 degrees and cook an additional 40 minutes or until a toothpick inserted into center of cake comes out clean. Cool completely and chill in refrigerator before serving (unless you prefer warm cheesecake). Top with fresh strawberries, almond slivers, blueberries, or whatever you prefer.
