line springform pan with foil to avoid water from the bain marie from leaking into the crust. mix melted butter and graham cracker crumbs together and pat into the bottom of the prepared pan. Bake at 350F for 10 minutes. CoolLower oven to 325F. Beat cream cheese for 4 minutes on medium until fluffly. Add the sugar. Beat on medium 4 minutes. Add vanilla and salt. Beat until incorporated. Add eggs one at a time. Beat for 1 minute after each and scrape the bowl often. Add greek yoghurt. Beat until incorporated. Add whipping cream. Beat until incorporated. Put springform pan with baked crust in a high sided roasting pan. Boil enough water to fill up pan 1.25 inches. Pour filling into pan. Smooth the top. Palce pan into the oven and carefully pour the water into the pan. Cook for 90 minutes at 325F.Turn off the oven and crack the door an inch. Let the cake cool in the over for one hour. Take out the pan and remove it from the bain marie. cover the springform pan with foil avoiding touching the cake. Cool 4 hours or overnight. Gently remove the cake from the springform pan.
