1 12oz can diet cola
10 graham cracker sheets
6 tbsp unsalted butter, melted
3 8oz blocks full fat cream cheese, softened
1 cup sugar
3 eggs
1 tsp vanilla extract


How Do I Make Red Velvet Cheesecake?

Here is how you make Red Velvet Cheesecake:

In a large mixing bowl combine cake mix and diet cola. Divide into 24 muffin tins and bake according to package directions. Once muffins are baked and cooled, place into the bowl of a food processor and pulse until cake is fine crumbs. This may take 2 batches. Set aside.Set oven temperature to 325 degrees. In the bowl of a food processor, place the graham crackers and process until they are in fine crumbs. Add melted butter and pulse to combine. Dump mixture into a greased 9 inch spring form pan. Wrap outside of pan with tinfoil and bake crust for about 10 minutes until it starts to turn light golden brown. Set aside. In large mixing bowl add cream cheese and sugar and beat with hand mixer until combines. Add vanilla extract and eggs one at a time until combined. Place a thin layer, about 1/3 cup, of cream cheese mixture to crust and using a spatula spread out to edges of pan. Add a layer of the red velvet crumbs. Add about 2/3 of cream cheese mixture on top of the red velvet crumbs spreading cream cheese evenly to edge of pan. Continue this pattern until all the cream cheese is used up, leaving enough red velvet set aside to top cake after it's baked.Place spring form pan in larger dish and carefully add boiling water to the outside dish. Place in oven and bake for 55 minutes. Once it has finished baking, remove from the water bath and run a knife around the outside edge of the cake. Let cool completely on a wire rack.
