Cheesecakes:In bowl, blend cream cheese and sugar, add eggs and vanilla extract with mixer blend until smooth.Line 21 muffin cups in two muffin baking pans with the paper and aluminum liners. Fill each lined cup 2/3 full.Bake in preheated oven at 325 degrees for 20 minutes.Remove from oven and let cool for 10 minutes or until batter is firm.Topping:In bowl, blend sour cream, sugar, and vanilla until smooth.
