The ingredients for Mango Cheesecake are:

1 cup cookie crumbs (for crust)
1 tbs apple juice
3 cups fat free cream cheese, softened
1 cup Neufchatel cheese, softened
1 cup low fat sour cream
1 cup splenda
1.5 cup mashed mango
3 tbs all-purpose flour
1.5 tbs vanilla extract
2 eggs (i use 0.5 cup egg beaters)
2 tbs cornstarch


How Do I Make Mango Cheesecake?

Here is how you make Mango Cheesecake:

To make crust: combine cookie crumbs and apple juice and toss until moist. Press into the bottom of a 9 inch spring form pan coated with cooking spray.To make filling: beat cheeses and sour cream at a high speed until smooth. Add sugar, mango, flour and vanilla, beating well. Add eggs and beating well. Beat in cornstarch. Bake at 325 degrees for one hour until almost set. Remove cheesecake from oven, run a knife around edges, and let cool until at room temperature. Cover and chill for 8 hours (or overnight).
