These are really decadent desserts...and great gifts! Does take some time to prepare. They require 3 (16oz), wide-mouth, pint Mason jars to hold this recipe. The original recipe was for 12 (4oz) wide-mouth jars, but this recipe is too labor-intensive to fix that many jars...PLUS those tiny jars don't hold enough! lol

Crust:
9 Oreo Cookies - crushed
4 tsp Splenda
4 tsp granulated sugar
2 Tbsp Smart Balance Light Buttery Spread (melted)
1/4 cup, chopped Pecans

Caramel Layer & Topping:
4 Tbsp Evaporated, Fat Free Milk (about 1/4 cup)
7 oz of Caramels (for less calories, could use fat-free caramel topping) - leave some for the topping

Filling:
2 (8oz ea) pkgs. of Cream Cheese, Fat Free (room temperature)
1/4 cup Splenda No Calorie Sweetener
1/4 cup granulated sugar
1 Tbsp Carbquik (or other low-carb) Baking Mix
1/2 cup Egg Makers (or Egg Beaters) Fat/Cholesterol Free Egg Substitute (equal to 2 eggs)
3/4 tsp Vanilla Extract

Topping:
1/4 cup chopped Pecans
1/2 cup Dark Chocolate Mini Baking Chips (Stevia Sweetened)
Rest of Caramel sauce



How Do I Make Turtle Cheesecake in a Jar?

Here is how you make Turtle Cheesecake in a Jar:

Preheat oven to 250 degrees & set rack in the middle of the oven. Wash 3 (16 oz-pint), wide-mouth Mason jars and thoroughly grease all of the inside of each jar.Stir together the 'crust' ingredients, divide mixture in thirds, and place 1/3 into bottom of each jar. Lightly press into jar. Set jars on a cookie sheet or in a pan & bake for 5 minutes at 250 degrees. Remove from oven and sprinkle 1/4 cup pecans over crust and set aside.Melt caramels & evaporated milk together. I used about 1/2 of an 11oz pkg of unwrapped caramels that I mixed with the milk & melted in the microwave for about 1 to 3 minutes on high (check every minute, as each microwave is different). When melted, set aside.Place the 2 (8oz) pkgs of room temperature cream cheese in a stand mixer bowl (if available) & beat at med-high until smooth (about 2 minutes) - scrape the sides of bowl a couple of times. Add sugar & baking mix and mix for another 2 minutes. Pour in egg substitute & vanilla and beat another 2 minutes on low speed (scraping down sides of bowl). Put about 3/4 cup of the cheesecake mix into each of the jars. Then put about a 1/4 cup of the caramel mix in an even layer on top of the cheesecake (leaving some of the caramel mix in the bowl for topping later). Then put another layer of cheesecake (finishing off the cheesecake mix) on top of the caramel layer. There should be at least 1/2 inch left empty at the top of each jar.Place jars back into the 250 degree oven and bake for 23 to 27 minutes, or until the center is no longer jiggly. Turn off the oven, leave the door open, and leave the jars in there until they come back to room temperature (about 45 minutes or more).When you can safely remove the jars, sprinkle on the rest of the pecan pieces, the mini chocolate chips & then gently re-heat the caramel & drizzle on top. Then seal the jars and store in the refrigerator for at least 12 hours before serving.Enjoy!Serving Size:?Recipe makes 3 jars (16 oz pint jar).
