Here is how you make No-Guilt Single-Serving Cheesecakes:

Heat oven 300 degrees. Put the graham crackers into a food processor or blender long enough to make them into fine crumbs. Add 2 Tbsp. of sugar and mix well. Add 2 Tbsp. of the egg substitute and mix to form moist crumbs.Either lightly coat (with nonstick cooking spray) the muffin pans, or place 20 paper muffin cups into muffin pans. In each of the 20 muffin cups place 2 tsps. of the graham cracker mixture. Using a spoon or pastry press, press the crumbs into the bottom of the cups and slightly up the sides. Set aside.To make the filling, put all the filling ingredients into a medium-sized bowl or food processor and beat until a smooth mixture is formed.Put 3 Tbsps. of the filling in each of the muffin cups.Bake for 40 mins. or until the filling is puffed up and the edges lightly browned.
