3 teaspoons vanilla extract
1 1/2 teaspoons unbleached flour
3 egg whites
1 can Lite Cherry Pie Filling (I used Comstock)

Here is how you make Heather's Skinny Mini Cherry-Topped Cheesecakes:

Preheat oven to 300 degrees F.Line 18 muffin tin with cupcake liner & spray with butter flavored cooking spray. Place one cookie, flat side down in each cup.Beat egg whites to soft peak in clean bowl.Combine cream cheese & sugar and beat until smooth.Add remaining ingredients (not cherry pie filling) and mix on low until just combined.Fold in egg whites in 2 batches with a spatula.Fill in tins and bake 18-20 minutes, or until set. The cheesecakes will puff up and crack - this is good!.Transfer to a cooling rack and then to the fridge for at least 5 hours or over night.Top with pie filling and serve! yum!
